Yummy Veggie Wraps

- 2 Sundried Tomato & Basil Tortillas (or any flavor)- 4 cups of Spinach- 1 Portabello Mushroom- 1 Green Pepper- 1 Red Pepper- 1/2 Red Onion- 1 tsp Chili Pepper Paste- 1/4 cup lite Mayo- 1 clove of Garlic- 2tbsp Parmesan Cheese- .5 - 1tbsp Olive Oil
- Slice peppers, mushroom and onion into strips. Saute in a little olive oil for about 10 minutes. Add 1 cup of the spinach when you have about 3 minutes left. Add chili paste to taste.
- Meanwhile, add mayo, garlic, remaining 3 cups of spinach, and parmesan cheese to a food processor or blender and blend or pulse until smooth.
- Spread spinach mixture over tortillas and top with veggies. Fold into a wrap.
Makes 2 wraps.
