Spinach and Sausage Quiche

Ingredients
2 cups - 2% milk3 large white eggs3.5oz pkg feta cheese, low fat if possible3.5 oz mozzerella cheese, part skim1/2 link (1/2 pkg) Louis Rich Turkey Sausage, 97% Fat Free1/4 medium yellow onion1/2 pkg frozen spinach, thawed, squeezed of all liquid, broken into crumbles1/4 tsp salt (optional)1.5 cups flour, bread, enriched2/3 stick unsalted butter1/3 cup ice water
Directions
Prepare crust:
Mix salt and flour and sift twice
cut in butter until crumbles resemble corn meal
add ice water and mix in with pastry blender - careful to keep mixture very cold - mix in stages if necessary, putting dough in freezer to maintain chill
Mix until dough is smooth
Roll dough out into pie crust thickness and place in buttered quiche dish
Bake at 350F for 15 mintues
Let cool
Make filling:
Dice sausage and onion to small dice.
Drain and squeeze all liquid from thawed spinach and break up into small crumbles.
Beat milk and eggs together until well blended.
Add spinach, onions, cheeses, and diced turkey sausage and any other additions you prefer.
Mix well and pour into cooled pie crust.
Bake in center of oven in 350 F oven for 1 hour, or until tester comes out clean.
Cool before serving.
Serves 8 to 10, depending on size of slices.
