Low Carb Almond Spice Cookies

Ingredients
2 cups Bob's Red Mill almond meal1 teaspoon ground cinnamon1/2 teaspoon ground nutmeg1/4 teaspoon ground cloves1/2 teaspoon salt1/2 cup plus 1 teaspoon granulated Splenda (sucralose)1 large egg1/2 teaspoon vanilla extract12 whole almonds
Directions
Preheat oven to 325°.

Combine all dry ingredients except for 1 teaspoon of sweetener in a large bowl. Beat egg together with vanilla extract and add to dry ingredients. Mix with a wooden spoon until mixture forms a large ball.

Form balls about an inch in size. Flatten to 1/4" thickness. Place on a baking sheet lined with parchment paper. Sprinkle with reserved sweetener and press an almond in the center of each cookie.

Bake 10-14 minutes, or until cookies are lightly browned on the bottom. Cool at least 15 minutes. Makes 12 cookies.

    If you are absolutely desperate for a cookie, these are ok, but I can't say I actually like them. They're really greasy because of all the almond and the sweetness from the splenda kind of gets lost in the baking. Sigh. I don't think there are actually any really good low carb cookies. - 6/21/11
