Fava Soup

Ingredients

1 cup dried fava beas1 meduim onion, chopped3 celery, chopped2 carrots, chopped2 cloves garlic1large box chicken broth3 small potatoes, cubed2 Tbsp Marjoram1 Tbsp Ground Thyme1 Tsp Fennel seed1 Tbsp Olive Oil1/2 cup frozen peas
Soak 1 cup fava beans overnight or 7-8 hours
Simmer beans 1 1/2 hours till tender. Drain
Saute onion, garlic, celery and carrots
Add cooked fava beans, chicken broth and potatos
Add herbs
Simmer until potatos are cooked through
Blend soup until smooth
Add peas and heat through
