Sauteed Cabbage w/Balsamic Vinegar

Ingredients
1 head cabbage, chopped1 T olive oil3 cloves garlic, chopped1 shallot, chopped1/3 c balsamic vinegar
Directions
Heat oil on lo-med; saute shallots and garlic x 3 min. Add cabbage and toss till all is coated w/oil and shallots and onions are incorporated. Saute, tossing occasionally, till cabbage is softened. Add vinegar and toss till uniformly coated. Cook until desired consistency. Add salt and pepper to taste. Makes 4 approx. 1 cup servings.
