Orange Pie

3/4 c. sugar1/4 c. cornstarch1/2 tsp. salt1 1/2 tsp. finely shredded orange peel2 c. orange juice2 eggs2 tbsp. butterWhipped cream (optional)
Bake pie crust at 450 degrees for 10 to 12 minutes and then cool.
In saucepan, combine sugar, cornstarch and salt. Gradually add orange juice. Cook and stir until bubbly. Reduce heat; cook and stir 2 minutes more. Remove from heat and allow bubbling to stop. Beat 2 eggs and add to mixture (if the eggs are added too soon, they will cook before they can be mixed in). Bring to gentle boil. Cook and stir 2 minutes more. Remove from heat. Stir in butter and peel. Pour into baked shell. Refrigerate. Best served with whipped cream.
