Four Ingredient Corn Cakes

Ingredients
1 cup self rising cornmeal1/2 cup flour3/4 cup milk1 can creamed corn
Directions
Mix everything but the milk. Add 1/2 cup of milk and mix. Add more milk if needed. You want these to be the consistency of pancakes. Cook just as you would pancakes - on a hot skillet or griddle, sprayed lightly with cooking spray.


You can add fresh cilantro, diced jalapeno peppers and diced scallions if serving these with a Mexican type dish.

    These were easy and delicious! Really, really good straight from the oven, nice and hot. (I didn't have self-rising cornmeal, so I just added 1 1/2 Tbsp baking powder.) - 4/7/11
