Slow-Cooker Minestrone Soup

Ingredients
4 c. vegetable broth4 c. tomato juice1 tbsp. dried basil1 tsp. salt1/2 tsp. dried oregano leaves1/4 tsp. pepper2 medium carrots, sliced (1 cup)2 medium celery stalks, chopped (1 cup)1 medium onion, chopped (1/2 cup)1 c. sliced mushrooms (or 1 can sliced, drained)2 garlic cloves finely chopped1 can (28oz) diced tomatoes (undrained)1 1/2 c. uncooked rotini pasta (any pasta is fine)
Directions
1. In 4-5 qt. slow cooker, mix all ingredients except for pasta.

2. cover, cook on low heat setting 7-8 hours (or until veggies are tender.

3. Stir in pasta; Cover; cook on High heat setting for 15-20 minutes or until pasta is tender.

Serve and Enjoy!

    I added lean meat because I am doing the Love food diet which requires more protein in your meal then what this soup offered that way I had my serving of protein (beef), fast carb (noodles), and slow carb (all the vegetables) in one meal. Love this meal because I can prepare it in the morning - 1/7/11

    I made this minus the mushrooms and thought it was missing something so I added ground chicken meatballs (1/2 cup breadcrumbs, 1 egg, 3 tsp ketchup) and 1 can of tomato sauce... WOW DELICIOUS! This is a keeper. - 1/18/10

    Very good & filling. I added a can of drained green beans to it too. Served it up with some homemade bread. I also cooked up the rotini in a separate pot & drained the water. Then served each bowl with a 1/2 cup of pasta & topped it with the soup mixture. Makes lots! - 11/29/10

    i made a few changes: added raw zucchini, 1 small chopped potato, some frozen veggies, more garlic. also a can each of drained grabanzo and kidney beans. instead of broth and juice i used msg free beef broth. this soup gets even better with age too!!!! - 2/17/11
