US Senate bean soup

Ingredients
1 pound dried great northern beans2 pounds lean ham3 medium onions, diced3 cloves garlic, minced3 celery stalks, chopped3 potatoes, mashed6 cups water
Directions
Rinse and sort beans. Place beans in a pot, cover with water. Bring to a boil and boil for two minutes. Remove from heat; cover and let stand 1-4 hours until beans are softened. Drain and rinse, discarding liquid. Place beans, ham and water in pot. Bring to boil. Reduce heat; cover and simmer for 2 hours. Add onions, garlic, celery, mashed potatoes. SImmer one hour longer. Serves 8-10.
