Mulligatawny soup

Ingredients
1 medium onion chopped4.5 tablespoons butter1/3 cup flour1.5 tsp dried parsley1.5 tsp curry powder (you can more if you like)1 tsp black pepper3 cans chicken broth3 cups chopped up turkey or chicken cooked1 cup chopped carrots1 cup chopped celery
Directions
In large saucepan, saute onion in margarine until tender. Stir in flour, parsley, curry powder, and pepper. Cook 1 minute, stir until smooth and bubbly. Gradually stir in chicken broth: cook until thickened, stirring constantly. Stir in turkey, carrots and celery. Simmer 30 min. Serve 6 (1 1/2 cup) servings
