Whole Wheat Pumpkin walnut Muffins

Ingredients
32 oz. canned pumpkin1/2 cup Splenda Brown Sugar Blend1/2 cup Promise Light3/4 cup Egg Beaters3 1/2 cup whole wheat flour2 tbsp baking powder1 tsp cinnamon1/2 tsp salt1/2 tsp nutmeg2 cup walnuts
Directions
Preheat oven to 350 degrees.
Cream butter and brown sugar together.
Mix in pumpkin and Egg Beaters.
In separate bowl, combine dry ingredients.
Slowly add dry mixture to wet mixture.
Add walnuts if desired.
Spoon mixture into greased muffin pan.

Bake at 350 degrees for 20-25 minutes, or until you can insert a fork or toothpick and it comes out clean.

Makes 24 muffins.
