Pesto Cous Cous

Ingredients
Cous CousBell Pepper (I like red for colour)Pesto (i use green)Onions (red for colour)Sundried tomatoesSpray oil / olive oil
Directions
1. Boil water and prepare cous cous as on packet.
2. Meanwhile cut the onions in quarters and the pepper into 8ths and fry in pan or grill in a George Foreman grill.
3. Chop sun dried tomatoes into quarters.
4. Mix all ingredients into cous cous.

Serve hot or cold. I like it hot with some grilled fish or chicken for dinner and then cold with some salad and a dollop of reduced calorie humous.
