Pork Chop & Brown Rice casserole

Ingredients
6 small pork chops, boneless1 cup brown rice1 medium onion1/2 green pepper2 stalks celery1 carrot1 can Campbell's Tomato Soup2 cans water1 Tbsp Worstershire Sauce2 Tbsp olive oildash black pepper1 Tbsp Oregano2 tsp chopped garlic
Directions
Put olive oil in deep sauté pan with a lid. Place on burner over medium-low heat.
Chop veges and garlic and add to oil, cook until onions are soft.
Move veges to side of pan and add chops.
Sauté for one to two minutes.
Arrange veges beside and on top of chops.
Sprinkle uncooked brown rice over chops and vegetable mixture.
In a separate bowl, mix one can of tomato soup with two cans of water, Worstershire sauce and spices then pour over chops and rice.
Mix slightly without lifting chops.
Cover pan and cook on low until rice is done.
Serves six - each serving includes one pork chop.
Freezes well if making in advance for family or individual servings.

    The taste was great. We used diced tomatoes instead of soup though. The only thing we had to play with is how long to cook it. We had it on 350 for 2 hours and rice was still crunchy. - 3/19/13

    It was great! I had to substitute using Tomato Bisque Soup, and leave out the celery, because didn't have it. It basically cooked itself while I did chores - I would add that you have to cook for 45 minutes after adding rice, and that 1/2 cup cooked rice is one serving. - 2/9/11

    Oops! Use one cup or slightly less of rice. Long grain white rice also works, but it's more nutritious to use brown rice.
