Green Split Pea Soup - Fat-free

Ingredients
1 lb dry, green split peas32 oz container reduced sodium broth (chicken/veggie work well - about 4 cups)6 cups water1 cup diced onion1 cup diced parsnip1 cup diced carrot1 cup diced radish1 cup diced celery1/4 cup diced leek2 sprigs fresh dill weed, finely chopped2 sprigs fresh flat-leaf parsley, finely chopped1 tsp garlic powder 1 tbsp kosher salt, or to taste1/2 tsp black pepper, or to tasteIn my grocery, these fresh veggies and herbs are sold together in a "soup pack". If you can't find this exact mix, it's OK.
Directions
Dice all veggies and put in large pot. Add dry green split peas to pot. Add broth and water. Stir to mix well. Bring to boil. Stir again, cover, lower heat and simmer for 1 1/2 hours, stirring occasionally. After 1 1/2 hours of simmering, add garlic powder, salt, pepper, parsley and dill. Stir, cover and simmer another 10-15 minutes, stirring occasionally. Serve hot.

Makes 10 one-cup servings.
