Greek Torta

Ingredients
2 packages reduced fat cream cheese, softened8 oz feta cheese, crumbled10 oz frozen spinach, drained and patted dry2 T Greek rub/seasoning mix4 oz. sun dried tomatoes1 T. Olive Oil (if desired)
Directions
Mix cream cheese and feta cheese. add in the spinach and greek rub. Continue to mix thoroughly. Line a small mixing bowl with plastic wrap. Place about 1/3 of the mixture into the mixing bowl "smooshing" it along the bottom. Top with the sun dried tomatoes and then remaining mixture. Chill until firm. If desired, lightly toast pine nuts with a tablespoon of olive oil. Once cream cheese mixture is firm, turn over onto serving plate. Lightly press pine nuts around the top of the torta.
