Brushetta with Tomatoes & Fresh Mozzarella

Ingredients
12 Slices of Italian Bread2 lbs ripe tomatoes1/3 cup slivered fresh basil2 garlic cloves1/3 cup extra virgin olive oil3 tbsp balsamic vinegar1/2 tsp salt1/4 tsp crushed red pepper flakes8 oz fresh mozzarella cheese
Directions
1. Preheat oven to 400 F. Place bread in a single layer on a baking sheet and toast in oven 3-5 minutes, until pale golden on top. Turn and toast 3-4 minutes until second side is pale golden.
2. In a large bowl, combine tomatoes, basil, garlic, oil, vinegar, salt & hot pepper. Toss to mix well.
3. Place 3 toasts on each plate. Spoon tomatoes and juice over bread and arrange cheese slices on top. Garnish with sprigs of fresh basil.
