Bert's Oatmeal Rolls

Ingredients
1 cup oatmeal (1/2 cup each quick and old-fashioned)3 tablespoons soft margarine2 cups boiling water2 packages yeast, dissolved in 1/3 cup warm water with 1 teaspoon sugar2/3 cup brown sugar, packed1 tablespoon white sugar1 1/2 teaspoons salt2 1/2 cups whole wheat flour2 1/2 cups white flour
Directions
In a large bowl, pour the boiling water over the oats and margarine. Stir and cool to lukewarm. Add sugars, salt and dissolved yeast to oatmeal mixture. Knead in the flour, a cup at a time. Allow dough to rise in a warm place for one hour. Punch down. Form into rolls and place in greased 9-by-13 baking pan. Allow to rise again for 20 to 30 minutes. Bake in a 350-degree oven for 20 to 25 minutes, until golden brown.

(Make 6 rolls across for 8 rows in 9-by-13 pan.)

    Very good. Dough is a little difficult to separate into individual rolls so I baked as one large loaf in suggested size dish and cut into the suggested servings afterwards. - 1/14/09
