Hashbrown Pancake

Ingredients
2 eggs1T soy milk1t garlic salt1t chipotle pepper, ground1T wheat flour1 lg potato, shredded (not peeled)1 oz each Monterey jack and cheddar cheese, shredded1/4c salsa mixed with 1/4c fat free sour cream (set aside to put on top)
Directions
In a medium bowl whisk the first 4 ingredients. Add the potato and cheese and mix well. Spray a nonstick frying pan with cooking spray and make “pancakes”. Cook until browned on both sides. Serve warm with a side of the salsa sour cream mixture.
