Cajun-Seasoned Bulgur-n-Beans

1/2 dry bulgur1 can navy beans, drained1 8 oz can of plain tomato sauce1/2 med. zucchini, diced1/4 yellow onion, diced1/4 green pepper, diced2 servings of Gimme Lean Sausage1/2 teaspoon liquid smoke1 tablespoon cajun seasoningsalt and pepper to taste
Put dry bulgur in a bowl and cover with boiling water. Cover the bowl with dish or pot lid and let soak for 30 minutes.
In small non-stick pan sprayed with olive oil or non-stick spray, saute gimme lean, turning and breaking apart with a spatula, until crumbled and cooked. In a pot sprayed with olive oil or non-stick spray, saute veggies (except beans) over medium-low heat, until the veggies soften. You don't want them to brown or burn. Add sausage, tomato sauce, seasonings and liquid smoke. Let the mixture simmer for five minutes, stirring occasionally to meld the flavors. Add the beans. Drain the bulgur and add to the pot; stir until incorporated. Let simmer five minutes more then serve. Serves four.
