Apple Caraway Muffins

1-1/3 cups white flour2 tablespoons baking powder3/4 teaspoon salt1/2 teaspoon baking soda2/3 cup rye flour2 teaspoons caraway seed1/4 teaspoon pepper1/4 cup softened butter1/4 cup sugar2 eggs3/4 cup sour cream1/3 cup apple juice1/2 teaspoon almond extract1-1/2 cups peeled, cored, finely diced apple
Preheat oven to 400F.
In a large bowl sift together first 4 ingredients.
Add next 3 ingredients, stir and set aside.
In a separate bowl, cream butter until fluffy.
Beat in eggs, one at a time. Add sour cream, juice and almond extract.
Add the moist mixture to the dry ingredients. Stir just until combined. Fold in apple.
Spoon batter into 12 well-greased pr paper-lined muffin tins, 2/3 full.
Bake for 20 to 25 minutes.
