Asian Omelette

Ingredients
2 eggsdash pepper1 tsp soy sauce or tamari1 tbsp flax meal (opt - adds fiber)1/2 clove minced garlic1/2 tsp fresh minced ginger1 tbsp chopped green onions1/2 cup chopped veggies (any mixture works well)
Directions

In small dish, whisk eggs together with all ingredients but mixed veggies. Cook in pan to make omelette.
If desired, saute veggies in a separate pan, then add to omelette before serving (I just put mine on fresh cut).

Enjoy! Serves 1.
