Red Cabbage Vegetable Soup

Ingredients
2 Tblsp olive oil1 1/2 cups chopped onion1 cup chopped celery1 1/2 cup chopped carrots3 garlic cloves, mashed4 cups shredded red cabbage1 28oz can whole tomatoes, squished1/3 cup long grain brown rice4 cups chicken broth1 15 oz. can red beans, drained1 Bay leaf1/2 tsp crushed dried thymeSalt and pepper to taste
Directions
Serves 10 - 1 1/2 cups each
Warm olive oil in a large dutch oven. Add chopped vegetables and garlic and saute til soft. Pour in tomatoes, chicken broth and rice and bring to a boil. Simmer about 20-30 min, until rice is cooked. Stir in red beans.
