Mushroom Chicken Risotto

Ingredients
1 1/2 cups of Arborio Rice2 tbsp olive oil2 cups mushrooms1 1/4 cup of chicken stock4 skinless chicken breasts2 tbsp of minced onion
Directions
Cook chicken until brown.

In separate pan, put in 2 tbsp olive oil, minced onion, and the rice.
Brown the rice for several minutes constantly stirring.
Pour in chicken stock.
Add mushrooms and chicken.

Cover and let simmer on medium until rice is fully cooked.
