Leftover Chicken Orzo Soup

Ingredients
1 small onion chopped2 med carrots chopped2 stalks celery chopped1-2 bay leavesblack pepper to tasteleftover roast chicken carcass1 32 oz carton of low-sodium chicken broth2-3 oz orzo pasta
Directions
prep and chop all veggies
add 1-2 Tbs of olive oil and saute 5 minutes
Pick over left over roast chicken thoroughly to get any remaining rib or back meat morsals. ( we normally take for granted and throw away the carcass, but you would be surpised how much meat is still on and it will make another hearty meal.) You should get around a cup of meat, chop into small pieces and set aside. Place the carcass in the soup pot and add the broth plus 3 more cups of water. (the carcass will make the broth richer and there will still be meat that falls off the bone)
After simmering for 20-30 minutes, add the chicken pieces and orzo and simmer 10 more minutes till it's done.
Remove the chicken carcass and scrape off any loose meat into the pot.
ouila, another meal in the budget that litterally cost pennies per serving.

    I used sweet potatoes and corn instead of the orzo, since I am not a big fan of pasta in soup. Quite tasty! - 12/1/09
