Cicken and Mushroom Rissotto

Ingredients
Chicken Thigh, 4 unit (yield from 1 lb ready-to-cook Mushrooms, fresh, 1 cup, pieces or slices Garlic, 3 tsp White Rice, short grain, 1.5 cup Chicken stock, home-prepared, 5 cup oil
Directions
Serves 4
Heat oil
Add garlic
slice chicken and add to heated oil and garlic
Slice mushrooms
Cook til chicken is coloured
add rice
cook til rice has a lil bit of colour
add stock little by little add more once rice absorbs liquid
constaantly keep stiring

    This is good; I like the garlic and mushrooms. It would have much more fiber if it was made with arborio rice, which is higher in fiber and protein. But this is good and fast. - 2/3/10
