Medium head cauliflowerFat free, trans free butter sprayApprox 1/4 cup half and halfdash of saltdash of pepper
Place a steamer basket in a large saucepan with 1/2 cup of water. Place the cauliflower in the steamer and bring to a boil over high heat. Reduce the heat to medium, cover, and cook for 4 minutes, or until CRISP-TENDER. Puree in a food *processor, adding the butter spray and half and half. Season with salt and pepper. NOTE: The half and half can be substituded with fat free is desired.
* I use a blender in place of a processor.
