Teddy Graham Muffins

Ingredients
3 cups crushed honey graham crackers1/4 cup sugar1 1/2 tbsp baking powder1 egg, slightly beaten3 tbsp honey1 cup vanilla soy milk1 1/2 cups chocolate Teddy Grahams, divided1/2 cup mini marshmallows
Directions
Crush graham crackers in a ziploc bag using a rolling pin. Mix crumbs, sugar, egg, baking powder, honey, and soy milk until wet. Stir in 1 cup Teddy Grahams. Spoon into 12 prepared muffin cups. In a small bowl, mix the marshmallows and remaining Teddy Grahams, then top each muffin with some of the mixture, pressing down lightly. Bake at 350 degrees F for 16 minutes or until done.

Makes 12 regular muffins.
