Whole Grain Pancakes

Ingredients
2 cups buttermilk (substitute: 2 tbsp lemon juice in a measuring cup and fill with regular or skim milk to 2 cups, let it sit for a few minutes to sour)1 cup whole wheat flour1/2 cup rolled oats1/4 cup cornmeal3 tbsp flax seed or meal3 tbsp brown sugar1 tsp baking powder1/2 tsp baking soda1 egg, beaten
Directions
1. Mix all ingredients in a bowl and let it stand for a few minutes. Add more buttermilk if the batter is too thick.
2. Cook on a hot, lightly greased griddle, using about 1/2 cup of batter for each pancake. Cook until brown on one side and around edge; turn and brown the other side.
