4 boneless beef top loin steaks (New York strip) (about 6 ounces each)2 tabelspoons minced fresh rosemary2 cloves garlic, minced1 tablespoon extra-virgin olive oil1 teaspoon grated lemon peel1 teaspoon coarsely ground black peper1/2 teaspoon saltfresh rosemary sprigs
Score steaks in diamond pattern on both sides. Combine minced rosemary, garlic, oil, lemon peel, pepper and salt in small bowl; rub mixture onto surface of meat. Cover and refrigerate at least 15 minutes. Grill steaks over medium-hot heat (bbq, stove grill, or I use my George Foreman) about 4 minutes per side until medium-rare or desired doneness. Cut steaks diagonally into 1/2 inch-thick slice. Garnish with rosemary sprigs. Makes 4 servings.
