Ingredients
1 15oz can black beans rinsed and drained1/2 cup frozen yellow corn kernals1 cup cooked brown rice1/4 cup diced red onion3 garlic cloves 1/4 cup diced roasted red pepper2 egg whites1/2 cup instant masa corn flour1 tbsp chipolte rub1 tsp ground cumin
Directions
mix ingredients and slightly puree leaving some chunks for astetics
cook on the stovetop or slightly freeze then grill until no longer gooey
