2 Chicken Breast (I use about 5 chicken tenders)1 Can of Corn1 Can of Diced Tomatoes1 Can of Black BeansDash of garlic powder or Mrs. Dash garlic & herbDash of pepper2 cups of salsa of your choice1/2 cup of diced onion1 Can of refried beans low fat1 cup of shredded cheese
Fry chicken in a large pan with olive oil. Cut up chicken before or after frying. Drain corn, tomatoes, and black beans then add to pan once chicken is fully cooked. Add salsa, pepper, onion, garlic powder and simmer for 20 minutes. Serve over heated refried beans. Sprinkle with cheese.
