Indian Spinach

2 tsp Olive Oil1 tbsp Cumin seed1 tbsp Ground Ginger1/2 tsp Coriander Coriander1/2 tsp Turmeric1 tsp Black pepperDash of salt6 Garlic cloves, chopped1/2 cup Seeds of Change Tikka Masala16 oz Frozen Spinach, thawed8 oz. Friendship Farmer Cheese, cut into squares
Heat olive oil in a medium sized skillet. Add spices and stir around until they start to blacken.
Add garlic, and continue cooking until garlic softens.
Add Tikka Masala and mix until all ingredients are combined.
Add spinach, mixing until the sauce is distributing evenly. Cook until the spinach softens.
Add cheese. I wasn't able to figure out how to get mine to stay solidified, so I crumbled it and mixed it all in together. You can also use paneer.
Cook until all ingredients are done. Goes well with rice and bread.
Makes 6-8 servings. Nutritional information is calculated for 6.

I made a boo boo. For the Tikka Masala sauce, I found a recepie for Tikka Malala spice and put half a cup of that in. It was way tooo strong. I added two large containers of Fage Yogurt and a full big can of tomatoes to make this edible. I'll use it more as a sauce, on chicken. Have sooo much of it! - 4/8/10
