Breakfast Pizza

Ingredients
1 Flat Out multigrain w/flax flatbread1 large egg1/2 oz feta cheese1/4 grape tomatoes, sliced/slivered1 cup (packed) baby spinach1 tsp olive oil
Directions
Makes 1 serving.
Heat oven to 450F.
In large non-stick skillet, heat oil over medium heat. Add spinach and saute until wilted (2-3 min). Mist (or lightly brush) one side of flatbread with olive oil. place it oiled side up in oven (on cookie sheet) and bake until it browns slightly. Remove flatbread from oven, spread spinach and tomatoes, leaving a space in the middle for the egg. crack the egg into the middle, sprinkle with salt and pepper if desired, and return to oven. bake 8-10 min til egg is set. Sprinkle with cheese, bake an additional 2 minutes.
