Crockpot Chicken-Vegetable Stew

Ingredients
2 14-oz cans Mexican-style diced tomatoes, undrained2 14-oz cans fat free chicken broth2 lbs chicken breast cut into bite size pieces1 15.5-oz can of whole kernel corn1 15.5-oz can of black beans
Directions
In a 3 1/2 - 4 1/2 quart slow cooker combine tomatoes, broth, chicken, corn, and black beans. Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3 1/2 hours.

Serve with brown rice or toasted whole wheat croutons. Top with lowfat cheeder cheese or sour cream.
