Low Fat Sweet Potato Latkes

1 large sweet potato, peeled and grated1 medium or large parsnip, peeled and grated3 shallots, peeled and slicedAbout 1 inch section of fresh ginger, peeled and finely grated (or 1 tsp of dried ginger)1 cup flour4 teaspoons sugar2 teaspoon brown sugar2 teaspoons baking powder1 teaspoon cayenne powder (or more, if you want them spicier)4 teaspoons yellow curry powder2 teaspoons cumin powderSea salt and ground black pepper4 eggsCouple tablespoons of milk (approximately – more or less for batter consistency)Non-stick cooking spray
In one bowl, mix the sweet potato, parsnip, shallots, and ginger. In another bowl combine the dry ingredients (flour, sugar, brown sugar, cayenne, curry, cumin, salt and pepper), then add the eggs. Add only enough milk for the batter to be wet and sticky but not soupy (so, sticky but with slightly firm structure). Combine the batter and dry ingredients in the other bowl. You may need to bring it together using your hands. Drop 2 tablespoon sized dollops of the latkes into a preheated pan over medium heat, coated with Non-stick cooking spray. Fry on one side until browned. Turn over and fry on the other side. You may need to re-apply non-stick spray after each session of latkes. Remove from pan and place on paper towels to drain. Makes approximately 18-20 latkes.
