Ingredients
1/2 cup packed brown sugar1/3 cup butter or margarine, softened2 large eggs1/2 cup whole wheat flour1/4 cup all-purpose flour1 teaspoon cinnamon3/4 teaspoon baking powder3/4 teaspoon baking soda1/4 teaspoon salt2 Golden Delicious apples, peeled, cored, and diced1 cup quick-cooking rolled oats1/2 cup coarsely chopped nuts plus more for garnish, ifdesired
Directions


1) Heat oven to 375 degrees F. Grease a 9-inch square baking pan. In large bowl with electric mixer, beat brown sugar and butter until creamy. Add eggs; beat until light and fluffy.

2) Combine both flours, the cinnamon, baking powder, baking soda, and salt; stir into butter mixture until blended. Stir in apples, oats, and nuts. Spread mixture in pan and bake 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cool completely

    These are delicious! We added Craisins and Walnuts as well as the apples, and used Splenda brown sugar instead! Turns out like a cake almost. My kids can't wait to take these as school snacks in the fall! - 8/3/10
