For Chicken-Two lean skinless chicken breasts1 cup chopped white onion1 tbs canola oil6 tbs of no added sugar fig jam or confit de figuesFor cooked veggies-1 green pepper, 1 sweet red pepper, 1 yellow pepper cut into stripsgarlic for tastetsp oilTo complete the fajitas-Whole wheat tortillasspinach and tomatospart skim milk mozzarella cheese
In a frying pan heat 1 tbs of oil... throw in your onions to brown them. Then, put in your chicken, and brown it and each side. Then, cover it with the jam or confit, and cook the chicken, covered if possible, cutting it into pieces or strips at the end.
At the same time on another burner, add your peppers to another frying pan with a bit less than 1 tbs of oil. Fry them on fairly high heat so that they brown and sizzle.
Serve with wheat tortillas, lowfat cheese, and veggies.
