Soy Sausage & Egg Cups

Ingredients
4 cups kirkland (costco) egg sub3/4 cup shredded cheese2 morningstar farms soy sausage patties, dicedsalt & pepper to taste
Directions
Preheat oven to 350 degrees. Coat muffin tin or mini-loaf pan with non-stick cooking spray.

In large measuring cup with pour spout, mix egg sub, cheese, salt & pepper. Pour equal amounts into individual loaf pan (for 8 servings) or large size muffin pan (12 servings) Place equal amounts of soy saugage pieces into each portion.

Bake 10-15 minutes or until egg mixture is set & no longer runny.
