Fiesta Chicken

Ingredients
5 skinless chicken thighs1 can corn drained1 12 oz can diced tomatoes1 4 oz can diced green chilies1 onion diced2 T olive oil1 tsp hot pepper sauce, or to taste1 T chili powder, or to taste1 T cumin powder, or to taste1 T garlic powder, or to tastesalt and pepper to taste
Directions
Put skinned thighs in 9x13 baking dish. Sprinkle with chili powder, cumin garlic, salt and pepper. Bake in 350 oven for 30 minutes.

While chicken is baking dice onion and saute lightly in olive oil. Do not brown. Add remaining veggies, more spices and hot pepper sauce to taste.

When chicken has cooked 30 minutes, put veggie mixture on top and bake another 25-30 minutes.

Make it as mild, or spicy as you like.

Serve over rice.
