Chicken Lentil Curry Soup

Ingredients
Heat Olive Oil (2 tbsp) in a large soup pot. Add the following spices:• ¼ cup curry• 2 teaspoons cayenne pepper• 2 teaspoons ground cumin• 1 teaspoon ground corianderStir and cook for about one minute. Add diced Chicken Breast (no skin, 4 breast, bone and skin removed), and brown.Add the following vegetables:• Chopped Garlic (5 clove)• Chopped Onions (raw, 1 medium (2-1/2" dia) • Chopped Carrots (raw, 5 medium)• Chopped Celery (raw, 3 stalk, medium (7-1/2" - 8" long) • Chopped Jalapeno Peppers (3 pepper3) • Chopped Red Peppers (sweet, raw, sliced, .75 cup) • Chopped Green Peppers (bell peppers), 0.75 cup) Stir and cook for about 5 minutes.• Add the following ingredients:• 1 teaspoon sea salt• Dried Lentils (1.75 cup)• Chicken Broth (32 fl oz)• Petite Cut Diced Tomatoes (3.5 cup)• 2 cups waterStir and simmer for about 45 minutes (or until the lentils are tender) with the lid on the pot. If you want a thicker soup, simmer with the lid off for up to an additional hour.
