Curried Split Pea Soup

Ingredients
16 oz package of dry split peas, washed1 medium onion, diced7 baby carrots, chopped8 cups of 99% fat free chicken broth or water3 cloves garlic, minced1-2 tsp salt2 TBS ginger root, grated2 TBS curry powder1 tsp ground cumin1/4 tsp ground corianderpinch of cinnamon1/2 of 1 Louis Rich Turkey smoked sausage, diced (come in packages of two)
Directions
Saute onions and carrots in olive oil until softened. Add garlic and ginger, cook about 1 minute. Add spices and allow to become fragrant. Add water/broth and split peas. Allow to boil, then put on lid and simmer about 1 hour. While peas simmer, lightly brown smoked sausage. You can blend soup after cooking for smoother texture. Add sausge last. Serve with low-fat sour cream and fresh cilantro. Also good over rice.
