Fish Pockets

Ingredients
1 T Olive oil1 cup sliced zucchini1 cup sliced carrots1 cup sliced summer (yellow) squash1 cup sliced red peppers, orange peppers, yellow peppers1/2 cup sliced bell peppers1 filet of salmon1 T lemon juicesalt and pepper to tasteI usually add seafood seasoning or lemon pepper also.
Directions
Take a piece of aluminum foil and add 1/2 filet of salmon. Add the veggies and seasonings. Wrap the foil into a pouch. Place on baking sheet and into 375 oven for about 30 minutes or until the fish is cooked to your taste.

I usually serve with a side of rice and salad.
