Pumpkin, Apple pancakes

Ingredients

1 C flour (all purpose or whole wheat)1/4 C packed brown sugar1.5 tsp baking powder1/2 tsp cinnamon1/2 tsp ground ginger1/4 tsp nutmeg1 large egg, lightly beaten1 TB canola oil1/2 C low fat vanilla soy milk1/2 C water or apple juice1 C pureed pumpkin1 small apple, peeled and grated
Whisk together in a medium bowl all dry ingredients.
In a small bowl combine rest of ingredients.
Stir pumpkin mixture into dry ingredients. Leave to stand for five minutes.
For each pancake, scoop 1/4 C batter onto a hot griddle or nonstick skillet sprayed with cooking spray.
Turn pancakes when bubbles appear and edges are cooked, about 2 mins. Cook for another 1.5 min on second side.
Makes 8-10 pancakes.
