Pizza Pasta Casserole

Ingredients

1/2 pound ground beef or sausage1/2 onion, chopped 1 recipe for my easy marinara sauce (you can use jarred sauce)1 box whole wheat spiral pasta cooked and drained, reserving about 3/4 cups starchy liquid1 1/2 cups shredded part-skim mozzarella cheese 1 serving turkey pepperoni1 cup green pepper strips
Cook pasta according to package directions, reserving 3/4 cup cooking liquid to thin the sauce, if desired.
Meanwhile, cook the beef until no longer pink. Drain and set aside.
Cook the onion in the same skillet, until tender. Add ground beef back to skillet. Stir in marinara sauce and pasta. Transfer to a greased 13x9x2" baking dish. Sprinkle with the cheese.
Arrange pepperoni, peppers, and additional pizza toppings over the top. Bake, uncovered, at 350 degrees for 25-30 minutes.

This is my second time making this. To bring down the calorie count for me, I put some of the dish in a 8x8 baking dish and the rest in a 9x13 dish. The 8x8 dish is mine as it only has a small portion of the ingredients: 1 cup cheese, 30g pepperoni, 4-8 ozs of meat and only some of the pasta. - 1/28/12

ZANQUETTA

You can certainly change the ingredients to suit your diet. This is the way I make it at home, so that is how it's calculated.
