Ingredients
2 tbs flour4 skinless, boneless chicken breasts2 tbs olive oil1 medium onion, finely chopped2 garlic cloves, minced2 tbs curry powdercoarse salt3/4lb small red potatoes cut into 1/2" cubes1 can diced tomatoes with juice
Directions
dredge chicken in flour. Braise chicken in olive oil. Set aside in bowl. Heat remaining olive oil, cook onion and garlic, stirring frequently until onion is softened about 5 minutes. Stir in curry powder and salt. Cook 1 minute more. Add potatoes and 1c water, bring to a boil. Reduce heat to a simmer; cover and cook until potatoes are tender. Stir in tomatoes and 1/4c water. Return chicken to skillet, simmer covered until chicken is cooked through.
