Hearty Spicy Dill Salmon Patties

Pink Salmon (canned), 1 canWhole-Wheat Crackers, .75 cup, crushedEgg, fresh, 1Lemon Juice, 1 lemon yieldsDill weed, dried, 2 tbsp Pepper, red or cayenne, 1 tspKraft Mayo Fat Free Mayonnaise, 2 tbsp *Spray olive oil for pan frying!
Turn salmon and liquid into a medium mixing bowl. Flake with a fork, removing OR mashing any bones (they are edible). Mix in onion, lemon juice. mayo and spices. Mix beaten eggs with salmon. Add enough bread crumbs, about 1/2 to 3/4 cup, to make thick enough to shape into 6 patties.
In a large heavy skillet over low heat, spray some olive oil (or butter if not cutting back) add patties. Fry patties slowly on one side; spraying olive oil as needed. Turn patties and fry until brown on the other side.
Serves 6, depending on preferred patty size.
