Spanish Rice

Ingredients
2 t Olive Oil1/2 C Chopped Onion 1/2 C Green Pepper1 can diced tomatoes2 tsp taco seasoning mix2 scant cups of water1 C Rice1 t Salt
Directions
Saute Onion and peppers in olive oil to begin carmelization. Add tomatoes, seasonings, water and rice. Stir to mix. Cover and simmer on very low heat for 20 minutes. Remove the cover. Rice shoul be done. Let sit uncover so excess moisture can escape and rice has obsorbed all the flavors. This is a very mild recipe. Add hot sauce to taste.
