Linda's Chicken Curry

Ingredients
6 chicken thighs cut in 4 pieces each4 tblsp oil2 medium potatoes large diced2 medium onion large diced2 large carrots sliced2 tblsp curry powder4 cloves garlic minceddash black pepper (to taste)1 tsp salt2 cups water or more if desiredflour to thicken if desired
Directions
1. Cut up and fry chicken till golden in oil.
2. Add diced vegetables and seasonings. 3.Continue frying for 2 minutes on low.
4. Add water. Cover with lid and simmer 1 hour stiring ocassionaly. Add water if needed.
Serve with rice or flatbread.

    Actually... I never advertised it as low sodium... Eve tho it is reasonable between 700 and 800 mg. What are you griping about? I see no recipe of yours on here... yet you claim I knocked it over salt content?

    I have made something similar to this but I use breast meat as a healthier alternative to thighs. Also, some garam masala adds a little more flavor to the dish. - 3/14/07
