Chicken Thigh, 7 thigh, bone and skin removed *Dole Pineapple Chunks in 100% Pineapple juice No Sugar Added, 1 cup Ginger Root, 3 tspGarlic, 5 cloves*Snow Peas, fresh, 1 cupWaterchestnuts (water chestnuts), 0.5 cup slicesOnions, raw, 1 medium (2-1/2" dia) Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia)Teriyaki Sauce, 100 grams*Kikkoman Lite Soy Sauce, 4 tbspMushrooms, fresh, 1 cup, pieces or slices*Canola Oil, 3 tbsp
Add the oil to a large dutch oven or wok over high heat. Add the onions and peppers, cut into bite sized pieces. Cook for 3-4 minutes, then add the mushrooms. Cook for 3 minutes then add the ginger and garlic. Add the chicken and stir frequently to keep everything from burning. When chicken is half way done, add snow peas. Add the teriyaki sauce and lite soy sauce when chicken is done. Serve with brown rice.
