Chickpea & Mixed Vegatable Curry

Ingredients
2 tbsp olive oil1 medium onion, chopped2 celery stalked, sliced1 cup sliced carrots1 tbsp curry powder2 1/2 cups chicken or vegetable stock1 19oz can chick peas2 medium tomatoes, chopped1 cup diced snow peas, or sugar snap peas2 cup baby bok choySalt & pepper to taste
Directions
Heat oil in large skillet. Add onion, celery & carrot. Cook 5 minutes. Mix in curry powder and cook, stiring for 1 minute. Add stock & bring to a simmer. Add chickpeas and tomatoes and simmer 5 minutes. Mix the snap peas and bok choy and simmer 5 minutes more. Season with salt and pepper and serve.
